    Traditional Cucumber Tea Sandwich

    1 medium cucumber
    Some butter
    A loaf of thin sliced white bread
    Salt and pepper to taste


    Wash the cucumber then peel - or score - it lengthwise. Cut it into thin slices.
    Place the cucumber slices between some paper towels in order to soak up some of the moisture.
    Pepper and salt the slices to taste.
    When you are ready to eat, put a thin layer of butter on each slice of bread - this will help the bread not to get soggy. Then place some cucumber slices on the bread slices. Cut off the crust and cut diagonally twice. You will have 4 triangles.



    Ne "L'importanza di chiamarsi Ernesto", la commedia di Oscar Wilde ambientata alla fine del ‘800 dove si prende in giro la "seriosità" del periodo tardo vittoriano, erano i "cucumber sandwich" (sandwich al cetriolo) di cui la temibile Lady Bracknell lamentava la mancanza.
    Questo la ricetta di uno dei più famosi sandwiches inglesi:
    Togliete il bordo a 2 fette di pane in cassetta, spalmatele con del burro salato e sulla prima mettete delle fettine di cetriolo, tagliate sottili, ed un po' di pepe macinato.
    Chiudete il vostro sandwich con la seconda fetta di pane e lasciatelo in frigo, fino al momento di mangiarlo, ricoperto con della pellicola trasparente.




    ...e, a grande richiesta, un'altro classico della cucina Britannica/Vittoriana:
    L'INSALATA DI LINGUA!!!

    4 Lamb tongues
    2 tablespoons oil
    2 onions, chopped
    1 garlic clove, crushed
    1/2 teaspoon each oregano, pepper, salt and ginger
    Juice of one lemon

    Serves 4 persons

    Wash tongue well and soak in cold water for 4 hours.

    Place the tongues in a pot with cold water and bring to the boil. Let boil for 15 minutes. Drain.

    Place the tongues again in a pot and cover with cold water and a teaspoon of vinegar, then let cook for one hour.

    Remove the tongues and reserve their water.

    When cold, take off the skin from the tongues and cut into slices.

    Sauté the onions and garlic in hot oil over medium heat. Then add 2 cups of the water that the tongues were cooked in. Stir.

    Place the tongue slices in an oven-proof dish, and pour the onion mixture, lemon juice and seasoning over the slices.

    Cover and bake in a hot oven for 30 minutes.
